The Red Lion Inn Cheese Log
1 lb Cream Cheese
2 tbs Minced Garlic
1/4 cup Chopped Chives
1/2 cup Chopped Dill
1/2 cup Grated Parmesan
1/4 cup Mayonnaise
1 tsp Salt
1 tsp Pepper
1/2 cup Chopped Pecans
Combine all ingredients except for the chopped pecans into a large bowl.
Blend the mixture with a paddle attachment (if possible) for 5 minutes or until the mixture has come to a frosting-like consistency.
Line a sheet pan with wax paper and spread the mixture evenly onto the pan in a rectangular shape.
Sprinkle the pecans over the mixture evenly.
Cover with foil and refrigerate for at least 24 hours.
When the cheese is ready, remove the foil and roll the cheese into a jelly roll form, removing the wax paper as you go.
